Ingredients:
1 1/2 c cooled quinoa, cooked with salt, ground cumin and turmeric
1 1/2 c black beans- cooked, rinsed
1 1/2 c cooled, sautéed corn or small diced cucumber
1 med red onion, small diced
3/4 c red bell pepper, small diced
1/4 c finely chopped cilantro
Dressing:
5 T lime juice
1 1/2 T Red wine vinegar
1/4 c olive oil
1 tsp salt
1 1/2 tsp cumin
Add ground coriander and chili powder or
taco seasoning to taste.
Stir together and refrigerate until mealtime.
